With Haesinjuk, you don’t have to choose between poultry and seafood The traditional wisdom to beat the heat in Korea is to indulge in a variety of nutrition-dense dishes to build strength. Our take on modern at-home Haesinjuk is a delightful fusion of terrestrial and maritime wellness in the form of chicken and abalone rice porridge. The dish combines the virtues of abalone, often known as the ginseng of the sea, with other wholesome seafood in a manner reminiscent of the traditional chicken soup called Samgyetang. Chicken and seafood porridge Servings: 2 Ingredients: 1 small bowl of instant rice 1 pack of bibigo Samgyetang 300 ml of water 3-4 shrimps 1/2 a squid 10g of chives 1 sprig of ginseng sprouts A drizzle of sesame oil 4 dried jujubes 100ml of Cheongju (Korean cooking wine) Recipe: 1.Chop the chives into bite-sized pieces. 2. Clean the squid and cut the body into rings and the legs into small pieces. 3. Prepare the abalone and shrimp by cleaning them thoroughly. 4. Separate the chicken meat from the bones in the Samgyetang and shred it by hand. 5. In a pot, combine the Samgyetang broth, 300ml of water, and dried jujubes, and bring to a boil.  ✔TIP You can also use bibigo’s Chicken Stew instead of Samgyetang and add traditional herbal ingredients for a similar effect!  6. Once boiling, reduce to medium-low heat and add the chicken, glutinous rice, and preheated instant rice, then boil for about 8 minutes. 7. Add the prepared squid and chives, and boil for another 3-4 minutes. ✔TIP Stir occasionally to prevent the porridge from sticking to the pot! 8. In a steamer, add water and Cheongju, and steam the prepared abalone and shrimp for 7-8 minutes. 9. Serve the porridge in bowls and drizzle with sesame oil. 10. Garnish the porridge with steamed abalone, shrimp, squid rings, and top it with ginseng sprouts. This recipe is a testament to the beauty of Korean cuisine, which often marries diverse ingredients to create dishes that are not only nourishing but also deeply flavorful.
